Coconut Carrot Cupcakes. Nom! Nom!

Carrot cake has always been my mom's absolute favorite cake.   This year, as a special, "Thanks, Ma!" Mother's Day gift, I whipped up a batch of Coconut Carrot cupcakes just for her.

These Carrot Cakes are topped with a thick-n-rich Cream Cheese frosting.  The finishing touch--fresh toasted coconut topping.
