Happy Easter Peeps!
Happy Easter to all my little Easter Bunnies! I hope you have a funtabulous day filled with family, food, and--of course--a good Easter cupcake!
This year I was in the mood for cupcakes full of color! These Easter Basket cuppies are yellow buttermilk cake, a light fluffy coconut buttercream frosting, and are decorated with the best-in-class Easter basket trimmings.
The yellow buttermilk cake is made with two flours: Cake flour and all-purpose flour.
According to Martha Stewart, a "Cake flour makes for a delicate crumb, while all-purpose flour keeps them from being too tender."
I simply must agree. Yellow buttermilk cake has the perfect texture, an easy bakery favorite.
