Pink Velvet: Hello Kitty Cupcakes

I hope that you had a FABULOUS Thanksgiving. I ate my face off. Gross? Yes. Yet, beautiful all at the same time. :-) It's left me wanting to eat everything I see all weekend!

I will be the first to admit, decorating...not my forte. I like to focus on creating intresting taste combiniations and new put ups for cupcakes. But, I'll try anything at least once.

So this week, I experimented with my hand at decorating. I've been wanting to create some fierce Hello Kitty cupcakes for a while now. Then I had the idea of Pink Velvet. A play on the forever favorite RED VELVET cupcake...but our favorite Kitty color on the inside...PINK!


What I love most about the Pink Velvet cupcakes are the frosting. A VERY VERY delicate and delicious cream cheese frosting. Light, yet creamy and utterly mouth warming. I decoed the top with Wilton Decorating Gel.

I chill these cupcakes for 1 hour before decorating. It is one cool sweet treat!
