Mmm! Mmm! Lemon Mascarpone Cupcakes

What is my latest cupcake creation? Lemon Mascarpone! 

A moist and delectably tart cupcakes with a smooth and rich mascarpone whipped frosting. I've been craving something lemony delicious all summer.   Luckily, I had a great client who was willing to let me experiment for her daughter's "launch" party.  (That's what they're calling graduation parties these days--cute right?! ;-) )

Coconut Carrot Cupcakes. Nom! Nom!

Carrot cake has always been my mom's absolute favorite cake.   This year, as a special, "Thanks, Ma!" Mother's Day gift, I whipped up a batch of Coconut Carrot cupcakes just for her.

These Carrot Cakes are topped with a thick-n-rich Cream Cheese frosting.  The finishing touch--fresh toasted coconut topping.

Luck O' The Irish Pistachio Cupcakes! Happy St. Patricks Day from TuTu Cupcakes

Today is the day you can eat all the corned beef and cabbage your stomach can hold, and drink St. Patty's Day beer until your tongue turns green.  But, do you really think it will feel like St. Patrick's Day if you don't have a cupcake to celebrate?   Me thinks not.
